Red Sauce in the Oven

I like good red sauce and have a painless way to get there
I would write it all out, but honestly, I mostly adhere to this recipe, but I usually add 1/2 cup of wine at the beginning and italian sausage thats been browned on the stove to the mix after an hour.

Baked Ziti using the sauce from above

After you've got your sauce all set and in the fridge (for a day or two)

Get:
1 lb mostaccioli
3 cloves garlic
1lb ricotta
1 lb mozzarella shredded
1 egg

cook mostaccioli til al dente
drain and mix in olive oil
toss in the fridge for a bit
Sautee the garlic
cool garlic
mix garlic, ricotta, and egg together
Mix ricotta mixture and mostaciolli in large bowl

Preheat oven 350
now layer your ziti using the sauce from above (include layers of spinach or zucchini/ mushrooms if you like)

thin layer of sauce on bottom
then noodles/ricotta mixture
then mozarella
then spinach or whatever
continue pattern with thicker layers of sauce until complete

Bake uncovered for 30-40 minutes @ 350

Let stand 10 minutes. Eat. Passout.

Garlic Oil


For those folks who shop at Cosco, BJ's or any other ' warehouse style ' grocery store, this little recipe/idea has helped our household with those left over garlic cloves. Now when we buy garlic, they come in a bundle of 10 or so and even though I use Garlic in everything, I tend to waste some cloves.


Ingredients:

Garlic
Oil
empty ketchup bottle ( or any container but I use old ketchup plastic bottles)


Put about 6-10 cups of oil in a saucepot, medium heat
Start peeling garlic cloves ( 10-25 ) and dropping them into the oil
Turn up heat
Remove from heat once most, if not all the cloves turn dark brown - let cool down for 10min
Pour garlic and oil into food processor - puree
Pour contents into plastic container - BAM - you have made garlic oil

Use garlic oil for your cooking - it really is wonderful :)

Ok, seriously...

Venison meatballs:

Go shoot a deer. Grind up some hams, rib meat, whatever.

1lb of venison (or mix with beef/turkey)
2 eggs
tsp garlic
2/3 Cup of italian bread crumbs
1/3 cup grated parmesan cheese
salt/pepper to taste....meh, I don't put much.

Mash it up, roll into balls and into a frying pan lightly greased on med/high.
Roll em around until they are browned fairly well.
Add red sauce of some kind
simmer for an hour or so.

serve on a sammich roll, with pasta, or screw it, eat em with a fork.

Make sure to adde nough sauce to to cover them in the pan and stir frequently.

Oriental Chicken Wrap:

I just created this on a whim during leveling yet again another character.

2 pc Chicken thigh/leg combo
2 cups Cabbage
2 cups Carrots
2 Scallions
2 cups of cooked white Rice
Flour tortilla
2 cups Raw Spinach
Soy Sauce
Curry
S/P

Take the thawed Chicken legs and place in casserole dish. Pour generous amount ( 1 cp of Soy sauce ) over the chicken. Sprinkle Chicken legs with Curry. Place in oven, 350 1 hour. Turn over the chicken so that the "meaty side " is face down and turn off oven, let chicken sit in the juices for 30 min.

Cook rice - place rice in container - put in fridge

Remove Chicken from oven and remove all the meat from the bone, place on a seperate dish and set aside. Take the juices from the casserole dish and pour into a bowl, siphon off most of the ' oil ' that floats to the top. Throw the shredded chicken into bowl with juices, cover and put in fridge - 1-3 hours.


Making the wraps:

Heat oil in skillet
Cut carrots and cabbage julienne style julienne veggies
Thrown veggies into skillet
Get your Spinach out
Remove marinated chicken from fridge
When the Veggies are almost done
Place some chicken into the skillet to get warm
Sprinkle some soy sauce into skillet

How I made ' layered ' my wraps was ;
1. Cold Rice
2. Chicken
3. Hot veggies
4. Spinach leaves

Wrap it up and enjoy


Okay, I made a change to the recipe

( substitute cooked veggies for cole slaw ) for today's dinner. Last night I made some Cole slaw ( last night to allow to refridgerate) - I cut up raw cabbage, scallions, carrots, celery - Placed into a bowl - Added 3/4 cp Soy sauce, 2 tspn Ginger, 1 cp Rice wine vinegar, 2 tablspn sugar, 1 cp apple-cider vinegar. I then took some mayo, soy sauce, ginger, lime juice to make an Asian sauce to coat the tortilla.

Much much better with the cole slaw
